  • 5 slices bacon, cooked and chopped/crumbled
  • 1 lb ground Italian sausage
  • 1 yellow onion, diced
  • 4 cloves garlic, minced
  • 32 oz chicken stock
  • 3 c potatoes, cubed
  • 1 t salt
  • 1/4 t pepper, freshly ground
  • 2 c kale, washed and cut into bite size pieces
  • 1 1/2 c heavy whipping cream
  • Parmesan cheese, grated/shaved (for garnish)

In a large pot, brown and crumble sausage along with onions. During the last couple minutes of cooking, add the minced garlic. Drain any excess grease. Return sausage mixture back to the pot and add the chicken stock and potatoes. Cover pot and allow potatoes to simmer for about 15-20 minutes, until tender.

Once potatoes are tender, add heavy cream, salt, pepper, kale and bacon. Stir to combine. Bring mixture back up to a simmer and allow the kale to soften and wilt. Add more salt and pepper to taste, if needed. Garnish with parmesan cheese and serve.
