  • 2 cups beef broth
  • 4 chipotles in adobo sauce (buy it on Amazon)
  • 2 Tablespoons adobo sauce
  • 2 Tablespoons garlic, minced
  • 2 Tablespoons apple cider vinegar
  • 2 Tablespoons lime juice
  • 2 Tablespoons cumin
  • 2 Tablespoons oregano
  • 1 Tablespoons onion powder
  • 1 Tablespoons garlic powder, plus extra for seasoning the roast
  • 1/2 Tablespoon salt, plus extra for seasoning the roast
  • 1/2 Tablespoon pepper, plus extra for seasoning the roast
  • 2 Tablespoons butter
  • 3 lb chuck roast

In a blender, add all of the ingredients except the chuck roast and butter. Blend until smooth to create a braising liquid. Pour half into the basin of a crock pot. Set the rest aside.

Season the roast generously on both sides with salt, pepper, and garlic powder. In a frying pan on medium-high heat, add the butter and sear the roast on both sides (about 3-4 minutes per side). Place the roast into the prepared crock pot and pour the remaining braising liquid on top. Cook on high for 6 hours or until the meat is tender and starts to falls apart. Shred the meat and serve with some of the braising liquid on top.

Excellent as a bowl – serve with cilantro lime rice, lettuce, pico de gallo, and sliced avocado.
